Delicious, practical and easy to useI had never cooked with fermented black beans before but I had seen them in several Thai and Chinese recipes. For this price, I thought I'd give it a try. Now I won't be without it. It lasts forever, a little goes a long way, and combined with Sichuan peppercorns, really packs a flavor punch. Highly recommend for stir fries. Use your food processor to grind up a teaspoon or two then toss with garlic into your oiled wok before adding anything else. Yum.5Makes wonderful homemade black bean sauce.These are excellent. I rinse them thoroughly and then convert them into black bean sauce by smashing them together with ginger, garlic, and dried red chili peppers in a mortar and pestle. I then add light and dark soy sauces, a pinch of sugar, just enough sesame oil to emulsify everything together, and a dash of MSG. Add this to caramelized onions in the pan, add some parboiled tofu, dry sherry to deglaze, cook a few more minutes, then hit it with chicken stock, thicken with potato starch and boom. Awesomesauce. Literal awesomesauce. An explosion of awesome awesomeness embodied in awesomesauce in your mouth. Kapow. Bang. Boom. Zing. Hot darn. Hot potato. Hot cakes. And, yes: awesomesauce. In my mouth. I rinse them and use them in steamed fish dishes, chicken dishes, tofu and veggies. I was buying them at a local store, but they moved to a far away location. What arrived was MeeChun Salted Black Bean. Ingredients: black beans and salt. Not fermented and does not NEARLY contain the seasoning advertised on the back label of the product displayed on the website.BUYER BEWARE...the product I received was sold by TA National Trading and fulfilled by Amazon. Do not buy this product until they change vendors. This item is not worth the hassle of returning so the vendor got away with substituting a substandard product this time, but I will never buy another product sold by TA National Trading!1Love the taste of these fermented black soybeans - very pleased!This is the first time I have ordered fermented black beans, although I eat powdered natto as much as I can - just about every day. Love the taste of these, and have put them in dip, on my pizza, and eaten right out of the bag. They have a mildly salty, savory taste, and are not at all unpleasant. Now you can make it yourself! These black beans are powerful flavor boosters--you only need a few of them to add a salty, funky spark to stirfries and noodle dishes. They go well with beef, pork, chicken, tofu, and veggies. They come covered in salt, so I recommend rinsing them in a sieve and chopping them up into a fine dice before throwing them in a wok or marinade.5I love this! But then I love Japanese nattoI love this! But then I love Japanese natto. Douchi fermented black beans have a miso-like funky taste but with more fierceness than miso. Great to add to stir fry if you're adventurous. You may not like it, but if you're up for an adventure try it. Goes well with Lee Kum Kee Chili Bean Sauce and Szechuan peppercorns, but spend the extra for a better grade of the peppercorns.
